  • 3 garlic cloves, minced
  • 3 medium carrots, peeled and chopped
  • 1 medium cauliflower, cut into florets

  • ½ cup canned pinto beans, drained and rinsed
  • ½ cup canned black-eyed peas, drained and rinsed
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1/3 cup fresh oregano, shredded
  • For the garlic steak bites
  • 2 tbsp. olive oil
  • 1 lb. chuck steak
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tbsp. unsalted butter
  • 4 garlic cloves, crushed
  • 2 tbsp dried parsley
Instructions
  1. To begin preparing the salad, heat olive oil in a large frying pan or saucepan over medium heat.
  2. Sauté the onions until translucent for about 5 minutes, then add garlic and cook for another minute.
  3. Incorporate chopped carrots and cauliflower florets, allowing them to cook for an additional 5 minutes until tender.
  4. Add tomatoes, pinto beans, and black-eyed peas, stirring well to blend flavors, and cook for another 5 minutes until heated through.
  5. Season with sea salt and freshly ground black pepper, then stir in fresh shredded oregano and set aside.
