Instructions

  1. Give your strawberries a good wash to remove any dirt or debris.
  2. Hulling simply means removing the leafy green caps from the tops. You can use your fingers or a small knife for this.
  3. Classic Mash:
  4. For a chunky jam texture, grab a potato masher and gently mash the strawberries to your desired coarseness.
  5. Food Processor Blitz:
  6. Do you prefer a smoother consistency? Pulse the strawberries in a food processor until they're coarsely chopped.
  7. In a large pot, combine the apple juice, mashed strawberries, and pectin.
  8. Stir well to incorporate everything.
  9. Crank up the heat and bring the mixture to a full rolling boil.
  10. If you prefer a sweeter jam, this is the time to add your desired sweetener (sugar, honey, etc.).
  11. Once boiling, maintain a strong simmer for 1 minute, stirring constantly to prevent burning.
  12. Remove the pot from the heat and skim any foam that may have formed on the surface, if necessary.
  13. Let the jam cool for about 30 minutes to allow the flavors to meld.
  14. Now comes the fun part!
  15. Pour the jam into individual glass jars or plastic containers (your choice!).
  16. For fridge storage, you're good to go!
  17. The jam will fully set within 2 hours and be ready to enjoy.
  18. If you plan on freezing the jam, remember to leave at least an inch of headspace at the top of the container to allow for expansion during freezing.
  19. This jam can be enjoyed as a spread, a topping, or even as a delicious syrup right away.
