- 3 lbs. strawberries
- 1 cup 1 100% apple juice or thawed apple juice concentrate
- 5 tbsp. low- or No-sugar-needed pectin (I’ve only used Ball brand)
- maple syrup, honey, or date paste to taste (optional)
- Give your strawberries a good wash to remove any dirt or debris.
- Hulling simply means removing the leafy green caps from the tops. You can use your fingers or a small knife for this.
- Classic Mash:
- For a chunky jam texture, grab a potato masher and gently mash the strawberries to your desired coarseness.
- Food Processor Blitz:
- Do you prefer a smoother consistency? Pulse the strawberries in a food processor until they’re coarsely chopped.
- In a large pot, combine the apple juice, mashed strawberries, and pectin.
- Stir well to incorporate everything.
- Crank up the heat and bring the mixture to a full rolling boil.
- If you prefer a sweeter jam, this is the time to add your desired sweetener (sugar, honey, etc.).
- Once boiling, maintain a strong simmer for 1 minute, stirring constantly to prevent burning.
- Remove the pot from the heat and skim any foam that may have formed on the surface, if necessary.
- Let the jam cool for about 30 minutes to allow the flavors to meld.
- Now comes the fun part!
- Pour the jam into individual glass jars or plastic containers (your choice!).
- For fridge storage, you’re good to go!
- The jam will fully set within 2 hours and be ready to enjoy.
- If you plan on freezing the jam, remember to leave at least an inch of headspace at the top of the container to allow for expansion during freezing.
- This jam can be enjoyed as a spread, a topping, or even as a delicious syrup right away.
