For the dough

  • 3 cups all purpose flour (360 g)
  • 1 1/2 cups unsalted butter—the butter should be softened
  • 1/4 cup cold water
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder

For the filling

  • 2 tins of sardines in oil (125 g each)
  • 1 medium carrot, shredded
  • 2 stems green onions, chopped
  • 1/2 a small onion, chopped
  • 2 garlic cloves, minced
  1. For the filling, heat half of the sardine oil in a skillet over medium heat.
  2. Sauté onions until fragrant, then add garlic, green onions, and carrots. Combine well, moving the vegetables to one side.
  3. Mash sardines (without oil) in the pan, ensuring they’re not overly mushy.
  4. Mix the mashed fish with sautéed veggies and remove from heat.
  5. To prepare the dough, mix flour, butter, salt, and baking powder until crumbly. Add cold water and knead into the dough.
  6. For the pie, roll out a portion of the dough and place it on a pie plate.
  7. Add filling, seal edges, and repeat.
  8. If you lack a hand pie maker, roll the dough into a rectangle, cut circles, add filling, and fold into half moons, sealing the edges with a fork.
  9. Arrange the pies on a parchment-lined baking tray.
  10. Brush with beaten egg and bake at 350°F (180°C) for 20 minutes.

If you don’t want to buy a pie maker, go ahead and just cut circles.
